Long known and respected for its chocolates, Belgium is also a great cheese country. It is said that, despite its small size, Belgium produces as many distinct types of cheese as does France. Many of its 300+ varieties are made in very small quantities and are not exported out of the country. The examples we do get, however, are quite impressive. This unique assortment includes four of our favorites:
  • Chimay Trappiste with Beer: Made by the trappist monks of Scourmont, this semi-hard pressed cow's milk cheese is washed in Chimay Ale and matured for six weeks. Its creaminess and fine taste of good, fresh, creamy milk give it all its flavor. (8 oz)
  • Chevagne: A surprisingly mild and creamy goat's milk cheese produced by the Passendale Dairy. Made with pasteurized goat's milk of the highest quality, this smooth cheese is delicious sliced and served on a dark, nutty bread; shaved over salads; or as part of a cheese board. (8 oz)
  • Passendale: A semi-soft cow's milk cheese, Passendale impressed us as a sure hit the first time we tasted it. We loved its delicious flavor, creamy texture, and sweet bouquet and found it to have universal appeal. You will feel comfortable serving this cheese to anyone, as it will not offend those with basic tastes, yet will still wow the connoisseurs with its soft, toasty finish. (8 oz)
  • Oud Brugge: This cheese is Belgium's interpretation of a fine aged Gouda. Nutty, creamy and delicious, it is best served with a robust beer or ale. (8 oz)

Made in small batches from fresh, local Wisconsin milk, Roth Kase's rich, creamy Moody Blue is delicately smoked over fruit wood to create subtle smoky undertones with hints of roasted nuts and coffee. Set it out with plum compote, fresh pears, or serve it with dark chocolate as a dessert plate. To craft Roth Kase's line of luscious blues, they start with Wisconsin's renowned natural resource: local family farms producing the highest-quality milk from Jersey and Holstein cows. This milk, higher in butterfat than most and with a character that changes from season to season, is transformed into delicate curds by our cheesemakers. They hoop the curds by hand into traditional round forms, then pierce, salt, and carefully cure each wheel of Moody Blue for four months or more to allow a lacey network of natural blue veining to develop. It takes time and effort to handcraft Moody Blue, but the result is well worth the effort: a classic blue cheese, deliciously creamy and tangy with a smoky, haunting finish.

About 100 years ago, a farmer's wife who lived in North Zealand (one of Denmark's most romantic islands -- a trysting place for lovers) became interested in the art of cheesemaking. She traveled through Europe to learn the secrets of this craft. Upon her return, she began to experiment with her newly acquired techniques. She named her finest creation after her farm, "Havarthi". Today's Cream Havarti is a direct descendant. It has an ivory interior patterned with a myriad of tiny holes and is mild, creamy, and mellow. The smoked rind infuses the cheese and adds a new dimension to traditional Havarti.
